This Japanese-inspired yet unmistakably Australian gin is the result of many years experimenting with yuzu – a citrus fruit native to China, Tibet and Japan.

Four Pillars use Victorian-grown yuzu in this gin, which gives a wonderful mix of lemon, mandarin, cumquat and grapefruit aromatics, while the lessons learnt from their previous adventures making gin with Japanese friends have led them to use botanicals like ginger, turmeric and sencha genmaicha – a Japanese green tea with roasted brown rice, for depth of flavour.
