Method
Fill one-third of an ice-cube tray with water and freeze. Once completely frozen, add herbs, flowers or fruit of your choice along with about 5mm of water and return to freezer to harden. This creates a second layer. The final step is to fill the cube mould to the top and quickly return to the freezer, keeping everything as cold as possible.
Hot tip:
Ensure your ice cubes remain crystal clear – rather than opaque – by using distilled or cooled boiled water.
