Ingredients

  • watermelon, blended (or 3 cups watermelon juice)
  • 1 cups white rum
  • 1 cup pineapple juice
  • 1 cup coconut water
  • soda water
  • fresh basil, to garnish (optional)

Looking for the perfect drink for your next picnic or garden party? This rum cocktail is as tasty as it is eyecatching. Serves 5-6

  1. Scoop out the flesh of half a watermelon, keeping the empty shell to use as your punch bowl, then blend the watermelon flesh into juice
  2. Pour into a jug and add the rum, pineapple juice and coconut water. Taste and add more pineapple juice if its not sweet enough
  3. Carefully pour back into the watermelon shell, top with soda water and garnish with fresh basil if using
