Ingredients

1 kaffir lime leaf

1 teaspoon pink peppercorns

60ml tequila

juice of half a lime

½ cup pink grapefruit juice

soda water, to top

pink peppercorn and salt rim, to garnish (see below)

This easy tequila cocktail is deliciously fragrant and refreshing with some nice surprises on the palate from kaffir lime leaf and pink peppercorn. Serves 1

To make a pink peppercorn and salt rim: Use a pestle and mortar to crush a small handful of pink peppercorns, add a teaspoon or 2 of salt and muddle together. Squeeze citrus juice onto a plate and salt-and-pepper mix on another. Dip the rim in the lime juice and then the salt-and-pepper mix to coat evenly

Muddle the lime leaf and pink peppercorns together in a cocktail shaker. Add ice, tequila and lime juice and shake vigorously. Strain into a glass and add pink grapefruit juice. Top with soda water and stir gently
