1/2 cup pink dragonfruit (flesh only, fresh or frozen works fine)
60ml vodka
60ml pineapple juice
lemonade, to top up
pineapple wedge, to serve

Add dragonfruit to a mixing glass or cocktail shaker and muddle until soft.
Add vodka, then pineapple juice and give it a stir.
Add ice to serving glasses. Add dragonfruit mixture evenly into each glass and top with lemonade.
Stir to combine. Garnish with a pineapple wedge.
Note: Depending on whether you're using fresh or frozen pink dragonfruit, the texture may differ. Adjust the amount of lemonade to get the drink consistency you require. For thicker 'slushie' styles, a straw is a great serving option.
