Ingredients

  • 60ml Emerson's London Porter
  • 15ml Bushmills Original Whiskey
  • 1 tablespoon liquid honey
  • 1 teaspoon raspberry jam
  • 1 whole egg
  • freeze-dried raspberries, to garnish
This surprising beer-based cocktail is a surprisingly elegant melt of Irish whiskey and Emerson's Porter. Serves 1

  1. Place all ingredients, except the garnish, in a shaker tin. Hard shake, holding the tin on both sides and popping every couple of shakes to let the fizz of the beer off (start light here and get more vigorous as the beer starts to flatten).
  2. Pack the tin with cubed ice and hard shake until the tin is frosted.
  3. Fine strain into a frozen coupette glass and sprinkle with freeze-dried raspberries.
