Raspberry Ginger Fizz

Ingredients

  • 1 punnet fresh raspberries (or 1 cup frozen)
  • 1 cup vodka
  • 4 fresh limes
  • 1 medium bunch fresh mint
  • 1.5 litres ginger beer
  • ice

A super easy and refreshing vodka cocktail that's delicious for sharing on sunny days and summer outings. Serves 6-8

  1. Fill a jug or pitcher with ice. Add the raspberries and vodka and mix well to combine
  2. Squeeze in the juice of 3 of the limes, and slice the remaining lime into thin slices and add to the jug
  3. De-stalk the mint leaves and add to the jug. Top with ginger beer to halfway, stir gently, then top with more ginger beer
  4. Taste and adjust (you may want more lime or less ginger beer) and serve immediately
