30ml quick strawberry shrub syrup

50ml white rum

soda water, to top

QUICK STRAWBERRY SHRUB SYRUP

2½ cups strawberries, plus extra to garnish (optional)

¾ cup sugar

¾ cup apple cider vinegar
This shrub uses strawberries and herbaceous notes of basil for a refreshing, slightly tart summer sipper, perfectly complemented by the sweet notes of white rum. Serves 1

Quick strawberry shrub syrup: Core and quarter strawberries, place in a saucepan with the sugar and leave to macerate for an hour, stirring every now and then to dissolve sugar. Add vinegar and place pot on a medium heat. Bring to a boil, lower heat and simmer for 5 minutes. Remove from heat and strain liquid through a sieve, pushing to release as much juice as you can (we double-strained for a fine texture). Discard solids. Extra syrup can be kept in the fridge for up to two weeks

For the cocktail: Muddle basil with the syrup in the bottom of a cocktail shaker. Fill the cocktail shaker with ice, add rum and shake well. Fine strain into short glass filled with ice and top with soda. Cut a strawberry in half and then cut out a heart shape to garnish, if desired
