Peachy Gin Party Pops

Ingredients

  • 1 cup basil simple syrup
  • ½ cup peach liqueur
  • ½ cup gin
  • 1 cup Graham Norton Prosecco
  • 1 peach, pitted and chopped
  • handful basil leaves, thinly sliced
  • BASIL SIMPLE SYRUP
  • ½ cup sugar
  • 1 cup water
  • handful basil leaves
Peach and basil hold hands in this adults-only ice-block – playful and delicious with every icy bite
  1. BASIL SIMPLE SYRUP: Heat the sugar and water together gently, stirring until the sugar is dissolved. Add the basil leaves and stir for 30 seconds, then turn off the heat and leave to cool. Discard the basil.
  2. FOR THE COCKTAIL: In a large glass jar, add all the liquid ingredients and stir well. Pour into ice-block moulds until three-quarters full. Add a little chopped peach and basil to each mould and top with any remaining liquid. Freeze until solid. Remove from the moulds and serve.
