Pavlova Bellini

Ingredients

  • For the meringue rim:
  • 2 meringues, crushed to a powder
  • 2 tablespoons sugar
  • For the cocktail:
  • 750ml sparkling rosé
  • 6 scoops lemon sorbet
  • sprinkling of leftover meringue rim powder
  • edible flowers and berries to garnish (optional)

This pretty cocktail with bubbles, berries and a meringue rim is the grown-up version of New Zealands favourite dessert. Serves 6

  1. To make the meringue rim, mix together meringue powder and sugar in a small bowl. Run a wedge of lemon or lime around the rim of each glass and dip into the bowl.

  2. Garnish with edible flowers or berries, if using. Enjoy!
  3. Pour sparkling rosé between six glasses. Place a scoop of sorbet into each glass and sprinkle with extra meringue rim.
