50ml Appleton Estate Signature Blend Rum

10ml liquid honey

30ml fresh lime juice

1 dash Angostura bitters

ginger cake or gingerbread man, to garnish
Surprise and delight with this cocktail, a cosy rum infusion. Dip the ginger cake into the warm nectar and warm up a cold night around the fire . Serves 1

Place the rum, lime, honey and bitters in a shaker tin or jam jar, pack with ice and shake hard for around 10 seconds. Strain into a ceramic cup.

Cut the ginger cake into a cube that fits into the ceramic cup and toast lightly to warm with a brülée torch or similar. Use to garnish the Daisy.
