Honolulu Highball

Ingredients

  • 45ml Bombay Sapphire Gin
  • 15ml orange juice, freshly squeezed
  • 15ml lemon juice, freshly squeezed
  • 15ml pineapple juice
  • 15ml simple syrup
  • ginger, thin slice
  • ice cubes
  • 45ml soda water
  • pineapple wedge, to serve
  • cherry, to serve
If you can't make it to the island hotspot of Honolulu, imbibe a cocktail that makes you feel like you're there. Serves 1
  1. Pre-chill a highball glass.
  2. Fill shaker with Bombay Sapphire Gin, orange juice, lemon juice, pineapple juice, simple syrup and ginger.
  3. Close shaker and shake for 10 seconds (for a fluffier finish, do a 'dry shake' with no ice first).
  4. Strain into an ice-filled, highball glass.
  5. Top with soda water and gently stir.
  6. Garnish with a pineapple wedge and cherry. Enjoy!
