Ingredients

60ml gin

20ml freshly squeezed lemon juice

30ml honey simple syrup (See note)

lemon twist, to garnish

ice cubes
Buzz into spring with this gin cocktail with a hint of sweetness from honey. Serves 1.

To make the honey syrup: In a small saucepan over medium heat, warm equal parts honey and water (say, 2 tablespoons each if you’re only making a few cocktails) until well combined. Remove from the heat and let cool to room temperature. You can cover and refrigerate the honey simple syrup for up to a couple weeks.

To make the cocktail: In an ice-filled cocktail shaker, combine the gin, lemon juice, and honey simple syrup. Shake and strain into a chilled cocktail glass. Garnish with the lemon twist.
