Bee's Knees

Ingredients

  • 60ml gin
  • 20ml freshly squeezed lemon juice
  • 30ml honey simple syrup (See note)
  • lemon twist, to garnish
  • ice cubes
Buzz into spring with this gin cocktail with a hint of sweetness from honey. Serves 1.
  1. To make the honey syrup: In a small saucepan over medium heat, warm equal parts honey and water (say, 2 tablespoons each if you’re only making a few cocktails) until well combined. Remove from the heat and let cool to room temperature. You can cover and refrigerate the honey simple syrup for up to a couple weeks.
  2. To make the cocktail: In an ice-filled cocktail shaker, combine the gin, lemon juice, and honey simple syrup. Shake and strain into a chilled cocktail glass. Garnish with the lemon twist.
