Ingredients

150gm feta cheese, crumbled

250gm sour cream

2 cloves garlic, finely diced

pinch chilli flakes

2 sprigs rosemary, finely chopped

3 cups sliced vegetables (cut into even sized lengths and sizes) cucumber, carrot, celery, capsicum, beans etc

½ cup white vinegar
-
¼ cup caster sugar
-
½ cup water
-
1 tablespoon black peppercorns
Nothing tastes as good as homemade dip – so dive in! Serves 3-4 as a snack.

To make the dip, whisk the crumbled feta and sour cream with the garlic, chilli and rosemary until creamy. Season to taste and chilli until needed.

For the vegetables, combine the vinegar, sugar, water and peppercorns and bring to a simmer, heat for 2 minutes then add the vegetables and cook for 1 minute then remove from the heat and allow to cool. Store in a glass bowl or jar.

Serve the pickled vegetables with the whipped feta for dipping.
