450 grams large raw prawn cutlets

cup tequila (we used El Jimador Tequila Blanco)

2 tablespoons sugar

1 lime, juice and zest

1 green chilli, finely diced

teaspoon salt

2 tablespoons olive oil

To serve:

lime wedges

spicy salsa

tortilla chips
A perfect entre for summer entertaining, although one taste and you might not want to share them at all! Serves 4

In a large bowl, combine all ingredients and set aside to marinate for 1 hour

In a large cast-iron pan or on the barbecue, fry prawns on a high heat for 1-2 minutes on each side or until prawns are pink. Brush over extra marinade as they cook

Serve with lime wedges, salsa and tortilla chips, and pair with some good quality sipping tequila
