Strawberries & Cream Biscuit Cocktail

Ingredients

  • 250g fresh strawberries, trimmed and cut into quarters
  • 1 heaped tablespoon caster sugar
  • 1/4 teaspoon vanilla bean paste
  • 500ml sparkling wine
  • 12 small scoops strawberry ice cream
  • ⅓ cup crushed shortbread or coconut biscuit
  • 1/4 cup crushed freeze-dried strawberries, to garnish
This naughty but nice dessert is the perfect way to end a delicious dinner – or start a fun evening. Serves 4
  1. In a large bowl, combine strawberries, caster sugar and vanilla bean paste. Set aside for 30 minutes to macerate.
  2. Spoon half of the strawberries into the base of 4 coupe glasses, then pour over the sparkling wine.
  3. Top with layers of strawberry ice cream, remaining strawberries and crushed biscuits.
  4. Garnish with crushed freeze-dried strawberries.
