Roasted Vegetable Pizza

Ingredients

  • 1 pizza base
  • of a pumpkin, cut into 2cm chunks (asparagus works too, if it's in season)
  • 1 large onion, finely chopped
  • 3 small zucchinis, thinly sliced
  • 2 tablespoons olive oil
  • 100ml spicy tomato sauce or tin tomatoes
  • 100g feta
  • fresh basil and mint
This moreish pizza paired with a large glass of Taylors Estate Clare Valley Merlot has your Friday night sorted
  1. Heat the oven to 180C
  2. Place pumpkin, onion, zucchini and olive oil on an oven tray and bake for 10 to 15 minutes or until pumpkin is tender
  3. Place your pizza base on a tray and spread tomato sauce or tinned tomato over it
  4. Scatter roasted vegetables and feta over the base and bake for 15 minutes
  5. Garnish with fresh basil and mint
  6. Serve with a glass of Taylors Estate Clare Valley Merlot
