Ingredients

1 cup hop-driven beer (we used Panhead Super Charger APA)

cup fresh coriander, stalks and leaves

4 cloves garlic, peeled

2 teaspoons fish sauce

2 teaspoons palm sugar or brown sugar

pinch chilli flakes (or to your liking)
This marinade uses the natural bitterness and pungent aromas of the hops in beer, countered with fresh herbs and a little rounded sweetness, and works wonderfully with chicken and fish. Enough to marinate one kilogram of chicken pieces. (Recipe by Anna King Shahab)

Blend all ingredients

Place chicken in an airtight container, toss marinade through and leave to marinate overnight, tossing once or twice

After removing meat from marinade, retain the liquid to baste meat while it cooks
