Goat's Cheese, Cherry and Pistachio Savoury Truffles

Ingredients

  • 100gm goats cheese
  • 150gm cream cheese, softened
  • 1 tablespoon finely chopped fresh ginger
  • ¼ cup dried cranberries, chopped
  • 1 spring onion, finely chopped
  • 2 tablespoons finely chopped herbs (we used rosemary)
  • ¼ cup dried cherries
  • ½ cup pistachios
These melt-in-your-mouth balls of bliss are a hit – and would make an ideal festive starter. Makes about 12.

  1. In a bowl combine the goat’s cheese, cream cheese, ginger, cranberries, spring onion and herbs and mash well until smooth
  2. Roll into small even sized balls and set aside.
  3. Crush the dried cherries and finely chop the pistachios and mix together on a plate. Roll the goats cheeseballs in the cherry mix until lightly coated.
  4. Serve chilled.
