Ingredients

2 fresh chorizo sausages

200gm mozarella, grated

100gm provelone, torn into chunks

50gm parmesan, grated

chopped coriander, lime (to squeeze over) and tortilla chips, to serve
A fabulously decadent snack, spicy and rich, served bubbling in a small cast-iron pan – with a stack of tortilla chips (and a tequila) on the side! Share between 6-8 people.

Preheat oven to 200°C fan bake.

Remove the chorizo meat from its casing and crumble into a non-stick pan with a little oil.

Set over a medium heat and fry, breaking up with a wooden spoon until the sausage is beginning to brown.

In the base of a small cast-iron frying pan, lay some of the mozzarella. Top with the crumbled, cooked chorizo, followed by the rest of the cheeses.

Bake for 10 to 15 minutes or until melted and bubbling at the sides.

Scatter over coriander, add a squeeze of lime (or to taste) and serve immediately with tortilla chips.
