Chicken & Bacon Mini Burgers With Ranch Dressing

Ingredients

  • 8 mini brioche-style burgers or slider buns
  • 2 small chicken breasts
  • 4 rashes eye bacon, halved
  • ½ cup ranch dressing
  • rocket or summer greens
The perfect-sized burger to please every peckish guest. Makes 8.

  1. Cut the chicken breast into thin slices and pan fry with the bacon slices until cooked through and juicy. Season well and set aside.
  2. Slice the buns through (about half way) then open up and spread generously with ranch dressing.
  3. Build your burger with greens, one slice of chicken and a slice of bacon. Sandwich together and secure with a skewer.
