
Ingredients

80g butter

1/2 onion, finely chopped

3 cloves garlic, finely chopped

100g flat mushrooms

150g white button mushrooms

1 1/2 teaspoons thyme leaves

80g cream cheese or creme fraiche
This delicious vegetarian pate is delicious when paired with a peppery Syrah. Makes 2 small pots, or 1 large.

In a large heavy bottomed frying pan, melt 40g butter and fry onions and garlic for 2-3 minutes. Add mushrooms and thyme and fry for 10 minutes. Allow to cool. Place in blender or processor with cream cheese and a grind of pepper and salt. process until smooth.

Spoon pate into a ramekin or jar. Melt remaining butter and pour over the top, allow to cool then cover carefully with wrap and store in fridge until ready to use. Keeps for a week. Serve with crusty bread and cornichons.
