2 tablespoons rum

2 tablespoons brown sugar

1/2 teaspoon vanilla extract

1 tablespoon olive oil

1 pineapple, cut into 1-2cm thick rounds then cut in half or quarters

TO SERVE

1/3 cup coconut yoghurt

zest of 1 lime, plus lime wedges
A wintery take on a pineapple. Grilling pineapple and glazing it in rum makes this a cosy snack or appetiser.

In a small bowl, combine the rum, brown sugar and vanilla extract.

Brush the grill plate/pan with oil. Cook the pineapple on the grill for 2-3 minutes on each side, or until golden. Brush with the rum sauce and cook for a further minute on each side.

Serve with coconut yoghurt, lime zest and lime wedges.
