¾ cup edamame beans

¼ cup minted peas

½ tin drained chickpeas

1 large clove garlic, crushed

2 tablespoons tahini paste

2-3 tablespoons lemon juice

2 tablespoons olive oil

Sea salt and cracked pepper to taste

Chilli flakes for garnish

Sliced French bread stick and dukkha for dipping

Cover the edamame beans and peas with boiling water for 2 minutes then drain well (reserve a few for serving).

In the food processor combine most of the drained beans & peas, chickpeas, garlic, tahini and lemon juice and blend until semi-smooth.

Add the olive oil gradually until a good, spoon-able consistency.

Season to taste and spoon into a serving bowl, top with the extra beans and garnish with a sprinkle of chilli flakes.
