500g raw jumbo prawns

3 tablespoons whisky

2 tablespoons caster sugar

2 cloves garlic, crushed

1 red chilli, finely chopped, plus extra slices to garnish (optional)

1 tablespoon olive oil

TO SERVE

lime wedges

coriander leaves
Succulent prawns grilled on the pan (or BBQ) and drenched in a generous splash of smooth whisky is exactly the dish you need this weekend.

In a large bowl, combine the prawns, whisky, sugar, garlic and chilli. Set aside for 20 minutes.

Preheat the pan or (BBQ grill) to a medium heat and brush with the olive oil. Grill the prawns for 3 minutes on each side, or until golden. Brush extra marinade over the prawns as they cook.

Serve the prawns with lime wedges, coriander leaves and extra chilli, if desired.
