60ml gin

60ml buttered apple syrup

hot brewed chamomile tea, to top

apple flower, to garnish

½ cup sugar

3 tsp cornflour

1 cup cloudy apple juice

1 tbsp lemon juice

2 tbsp butter
Raise your afternoon tea game by brewing a nice cup of chamomile tea, and adding a gin and buttered apple twist. Serves 1

Pour gin and buttered apple syrup into a heatproof glass or mug Mix well. Top with hot brewed chamomile tea and stir again. Garnish with an apple flower.

Buttered apple syrup: Mix sugar and cornflour together in a saucepan then stir in the apple and lemon juices. Stir over medium heat until mixture is thickened and bubbly. Lower heat and cook another 2 minutes. Remove pan from heat, and stir in the butter, until melted. Pour into a jar and keep for up to 1 week (Tip: any leftover syrup is great on pancakes).

Apple flower: To make an apple flower, slice pieces of apple with a vegetable peeler. Overlap pieces in a long row and then tightly roll up and secure bottom with a cocktail skewer.
