Ingredients

250g fresh strawberries, trimmed and cut into quarters

1 heaped tablespoon caster sugar

1/4 teaspoon vanilla bean paste

500ml sparkling wine

12 small scoops strawberry ice cream

⅓ cup crushed shortbread or coconut biscuit

1/4 cup crushed freeze-dried strawberries, to garnish
This naughty but nice dessert is the perfect way to end a delicious dinner – or start a fun evening. Serves 4

In a large bowl, combine strawberries, caster sugar and vanilla bean paste. Set aside for 30 minutes to macerate.

Spoon half of the strawberries into the base of 4 coupe glasses, then pour over the sparkling wine.

Top with layers of strawberry ice cream, remaining strawberries and crushed biscuits.

Garnish with crushed freeze-dried strawberries.
